So it has been a VERY long time since I last posted, and for that I am sorry. It seems as if the "cold" season has taken its toll on our whole family after all the fun we had this summer. Nonetheless, I am back and will try to post weekly.
I now have a very picky, but very healthy eater. This has brought me both joy and frustration as I never know what she will like, but I stay persistent in my efforts to expand her palette. For those of you who know me, we are always on the go which means coming home and cooking dinner needs to be done in a 30 minute or less time frame. I also despise eating out unless it is Panera Bread. Some may say you can't have the best of both worlds but I say FOOEY!
Here is a recipe that I have put together for the little one to eat. She is definitely a vegetarian, but I am ever trying to find ways to get her interested in meats.
HOMEMADE CHICKEN NUGGETS (TO FREEZE)
Ingredients:
1 tablespoon Thyme
1 teaspoon Basil
2 tablespoon Mrs. Dash Italian Medley
1.5 cups of flour (whole wheat is healthier)
1 stick of butter (1/2 cup)
1 tray of chicken tenders
Cooking directions:
1. Preheat oven to 400 degrees.
2. Cut thawed chicken tenders or strips into small 1" pieces.
3. Combine flour, Mrs. Dash italian medley, thyme, basil, and parmesan into one bowl or bag.
4. Melt the butter and put in a wide, not so deep dish that is good for soaking and dipping out. I use just a small bowl.
5. Put a few cut pieces of chicken at a time into the bowl of butter, soak for a minute, then put them into the flour mix. Make sure to coat the pieces with the flour mix really well.
6. Place on a greased baking sheet, spray the pieces with some cooking spray, and place in the oven.
7. Bake for 30 mins and PRESTO! chicken nuggets! Be sure to turn them over in the middle of the 30 minutes so they get nice and crispy. If you like them really crispy throw the oven on broil for about 5 minutes on each side and you are set!
I then put mine in a storage bag, date and label the storage bag and put in the freezer. When I want to feed them to the baby, I just get them out, dethaw in the oven at around 375 degrees for around 15-20 minutes.
